Birthday trip with family - where to go?

Planning a big birthday trip next summer, and have to think about things differently than if playing with friends/good golfers. I have spousal permission to plan a trio around golf, but will be with full family and only my son plays. He is 13, and loves the game but is currently not the longest hitter and pretty erratic (for example, last golf match at Spanish Bay went double bogey, bogey, birdie, lost ball then stuck in a fairway bunker for 2 consecutive scratches). I suspect he will be a lot better by next summer, but I’m looking for a trip where my wife and daughter won’t be bored out of their minds while we play golf and where my son won’t feel too beaten up by the courses. I’m also hoping my dad and brother will join us for one or two rounds, and dad will be about to turn 80 (good golfer, but hits it shorter than my son now).

We have it rounded down to Ireland (north or south), Scotland (anywhere) or NW England. I grew up in Cornwall, and lived in Dublin for a while and played most of the top courses there, so want to go somewhere new. Any recommendations?

Having the opportunity to go and spend some time there and not, is madness. As an entire deal - courses, town, hospitality, it is tremendous.
