It sounds like you are actually a good chipper who has just lost some focus and are trying to do too much. The fats might come from being too steep and the thins come from knowing you hit the last few fat. I would stop reading anything from Haney. That old chipping method has some good points for beginners, but you run the risk of getting steep with it too. Trying moving the ball position a little forward (middle of a narrow stance), losing any extreme shaft lean, and leveling your setup out just a hair with only a slight amount of weight forward.

Agree with mad. Flop shops and bunker shots can be hit with a very steep/narrow attack angle.

Move it more forward in stance and make sure your first move back is with your hands and arms and not shoulders. If shoulders start the club back on short shots its really easy to get angles too acute. Iteach helped me a ton with this.

Past few rounds I've been within 20 yards of almost every hole on the course in regulation, yet still cant break 85 due to horrible chipping. My confidence has gotten worse and worse to where I will fat or thin almost every chip I hit. Today I had 3 holes where I fatted or thin'd back to back chips, turning birdies into doubles.

When chipping I will typically use a 56 or 60 with low to normal bounce, but either stick the club in the ground or blade it over the green.

I cant do ANYTHING cute or artsy as far as shaft lean or closing/opening the face to alter trajectory (outside of flying it open and aiming left for bunker/flop play)

Even the basic lean shaft forward, play off back foot, using more or less a pendulum and stopping followthru just past the front leg (that I think Haney teaches?) has gotten away from me.

Interestingly, my sand game and flop shots are the best they've ever been. Hit multiple 30-50 yard sand shots to within 10 feet today.

Got the closest I ever have to throwing a club or snapping one over my knee today.

It sounds to me like you're not turning your hips/legs through with the club head. You can't chip without any leg movement (unless you're using a putting style chip). Try to face the target with your hips after hitting the ball. There are a few videos knocking around showing this.

Imagine if you were throwing a ball underhand to someone. When you finish the throw you will have turned to face the target (i.e. the person). You will miss the target if you keep your feet planted.

It doesn't matter what you do. The right arm must continue to move and the right wrist must unhinge from the wight of the club so the bounce and not the leading edge hits the ground first.

Too much shaft lean is the devil.

All "tips" are welcome. Instruction not desired.

I struggled with this same issue for a couple of years....then found iTeach's chipping set up tip on this site.

Check it out....ball way forward of front foot, weight on forward foot, play it with a 60 0r 56 with tons of bounce...and you get to be aggressive.

Lean shaft so its on at or past left thigh

keep that lean at impact, do not break down....rotate through ball...

my chipping is awesome right now from doing that simple thing....I was a flipper

to much wrist is death in chipping....stay on left side light grip pressure......amazing how little effort it takes to chip ball....

my distance control is unbelievable last 6 months....get up and down most times

Why not take a 7-iron and pretend it's a putter? Grip it like a putter and set up with ball position and feet like a putter, then putt the ball to the hole, thinking only about the right distance? If you have even just a minimum amount of hand-eye-coordination, you'll get up and down at least half the time.

Try that while until you've changed your wedge technique enough to have some confidence with it.

Watch Furyk's chipping video on YouTube. Explains his technique clearly and it works. He keeps it simple... I think a lot of people over-complicate chipping. I am always playing with guys who treat every chip like a flop shot. There's no need to make it more complicated than it is, it's just a little chip! Once you simplify it I am betting your results will improve dramatically.

Furyk's chipping setup is great.
Another thing is grip pressure.
Try tossing a ball onto the green. It's a free and easy motion, and you can do it fairly accurately without much thought.

Your brain can judge that distance well. It's hard to allow that innate control to work if you're gripping the club too tight.

Just try it at the chipping green...loosen that grip, trust that innate feel, and put it up there.
At first you will have to make a conscious effort to LET GO of control, but it will come naturally with a little time.

Or from 20 feet, why not putt it? Not the most glamorous way to chip but you'll get up & down more often than not.

The answer to better golf is work your butt off and learn how to hit it better, farther, and make more putts.

If I'm on the first cut of grass / fringe, I'll just putt it. I've tried the different clubs approach for distance and I can't seem to get the pop on anything lower than an 8 iron if its a distance - seems to simply shoot off low like a putt.

If I'm on the 2nd cut / fringe then I'll grab a PW / SW with a traditional chipping style. Judge distance by feel like tossing a ball to the pin. I make sure I pull the handle forward with my left arm to ensure it gets out of the way. In other words I take it bak with my righ arm , and on the down stroke I pull it with my left arm.

Am I doing anything wrong that I can't seem to pop up the ball in the air and roll on 7, 6, and 5 irons ala Jim Furyk style? In the mean time, I'll keep putting these type of shots until I perfect the lower clubs for chips.
